Companio Bakery offers ‘hands-on’ bread-making and patisserie courses for complete beginners and those with some experience of making bread and pastries. These are one day courses for up to 6 people held at Companio Bakery.
Under the guidance of trained and experienced artisan baker, Russell Goodwin, these practical courses will teach you the fundamentals of the art, craft and science of bread-making and patisserie. The aim is to help you explore and develop your skills and knowledge in a fun and informal environment. You will be making all your own breads and pastries which you get to take home to enjoy and share with your family and friends.
The day will start with a light breakfast and introductions before getting straight into making doughs for the day’s baking. Lunch will be provided after which we will divid, shape and mould our doughs. We will then just have time for afternoon tea and cake before we get baking ready for you to take home your breads and pastries.
There will be plenty of opportunity to ask any questions throughout the day and you will take away all of the recipes so you can carry on practicing and perfecting your skills at home.
INTRO TO BREAD-MAKING
This course is the ideal introduction to bread-making for those with little or no experience of making bread. It will teach you how to make by hand a variety of yeasted breads, giving you the skills and confidence to bake your own fresh bread at home.

If you are interested in learning the basics of sourdough bread made using natural yeast but have little or no experience then this course is perfect for you. We will explore the traditional methods used in this type of bread-making and you will learn about developing your own sourdough culture so you can bake with confidence at home.

Learn the basics of making a laminated dough and then create your own delicious croissants, almond croissants, pain au chocolat, pain au raisin and danish pastries for the perfect breakfast at home.
