I am delighted to report that I have reached my target of raising the £30,000 that I need to complete the fit-out and equipping of my bakery. My sincere thanks to everyone who has helped me get to this important stage in establishing Companio Bakery as Manchester’s first community-supported bakery.

With regards to the fitting-out of the bakery, I now have two fridges installed to help me manage the production of my sourdough breads. This will enable me to be more economical in terms of time management as well as improving the texture and flavour of my breads. It is getting quite warm at times in the bakery now that we are into the summer months so I will be installing a large extraction unit above the bread oven to ensure the bakery is a pleasant and healthy environment at all times. To finish it all, there is now proper signage on the exterior of my bakery unit, and supporters names have been added to my bike trailer in recognition of their valued help and support.

Courses to start from September 2016

I plan to start running bread-making courses from September this year and details will be published on my website very soon. These will be one day courses for up to 6 people held at Companio Bakery on Saturdays covering all aspects of the art, craft and science of bread-making. Initially there will be two different courses – an Intro to Bread Making and a Sourdough Basics course – and these will be expanded to include European Baking, Family Baking and Patisserie courses in the future.
